
It’s International Hummus Day on May 13th! Homemade hummus is so easy to make and tastes much better than most store-bought brands.

Ingredients:
1 can of chickpeas/garbanzo beans, drained and rinsed
3/4 cup chopped Bubbies Kosher Dill Pickles & 2 TBSP of brine
1 garlic clove, chopped
1/4 cup tahini
1 TBSP fresh dill, minced
1/2 tsp sea salt
1 TBSP lemon juice
1/4 cup extra virgin olive oil
optional: cilantro and pine nuts to garnish
Directions:
- In a food processor, combine chickpeas, half of the chopped pickles, brine, garlic, tahini, dill, salt, and lemon juice. Scrape the sides down and add a tsp of warm water if the mixture is too thick to blend.
- With the food processor on low, slowly drizzle in olive oil. Transfer to a bowl and garnish with remaining chopped pickles, chopped cilantro, and roasted pine nuts. Serve with pita, veggie sticks or chips.
