Ingredients

  • 3 tbsp olive oil
  • 1 butternut squash
  • 1 yellow onion, diced
  • 2 carrots, halved
  • 3 cups vegetable broth
  • 1/2 tsp sea salt
  • 1/4 tsp ground black pepper
  • 1/8 tsp ground nutmeg
  • 1/2 cup organic coconut milk
  • Sprigs of thyme for garnish
  • 1 cup Bubbies Naturally Fermented Sauerkraut for garnish + ¼ cup brine for added flavor

Ingredients

  • Sliced bread of your choice, toasted
  • 1 Avocado
  • 1/2 cup Bubbies Naturally Fermented Sauerkraut, drained
  • 1/2 a lemon
  • Red pepper flakes, to taste

Potato, Sausage & Sauerkraut Stew

Ingredients:

  • 1 Jar of Bubbies Sauerkraut
  • 4 Brat Style Vegan Sausages ( I used Beyond Meat)
  • 4 medium Gold Potatoes cubed
  • 1/2 Small Onion chopped
  • 1 tsp of Garlic Powder
  • 1 can of Gigante Beans in Tomato Sauce (You can use Butter Beans instead)
  • 1  1/2 cups of Sauerkraut Juice

Serve with:

Hearty sliced Bread

Ingredients

  •  2 Medium Parsnips
  •  16 oz of Brussels Sprouts
  •  2 medium Golden Beets
  •  1 Tbsp of dried Thyme
  •  1 Tbsp of grape Seed Oil
  •  Salt & Pepper

Horseradish Cream Sauce

  • 1 cup of Vegan Sour Cream ( I love Tofutti brand)
  • 2 tsp of Dijon Mustard
  •  4 Tbsp of Bubbies prepared Horseradish
  •  1-2 tsp of Beefree Honee or Agave Syrup
  •  Salt & Pepper to taste

Fried Dill Pickles w/ Dill Pickle Horseradish Sauce

  • Fried Pickle Ingredients
  • 6-8 Bubbies Kosher Dill Pickles sliced
  • 2 1/2 cups of Safflower or High Heat Oil to fry
  • 1/2 cup AP Flour
  • 1/2 cup Pickle Juice
  • 1 tsp of Garlic Powder
  • 1 tsp of Onion Salt
  • 1/3 tsp of Cayenne
  • 1/2 tsp Bayou BBQ Seasoning ( any dry bbq seasoning will work)
  • Pepper to taste
  • 1/4 cup chopped Parsley
  • Dill Pickle Horseradish Sauce Ingredients
  • 1/3 cup Vegan Mayo ( I used Vegenaise from Follow Your Heart)
  • 2 tsp of Pickle Juice
  • 1 Dill Pickle
  • 2 Tbsp Horseradish Mustard or Bubbies Prepared Horseradish
  • 1 tsp of Beefree Honee ( You can use Maple Syrup)
  • Salt & Pepper to taste
